Zabola Firma's fermented spring kimchi is made from crispy kohlrabi, radish, and carrots based on a traditional Korean recipe. The vegan product is made with tamari sauce instead of fish sauce, dates instead of sugar, and brown rice flour.

During the three-week fermentation process, the flavors gradually deepen, creating the characteristic sour, umami character. Gochugaru provides a pleasant spiciness, while garlic and ginger ensure a full flavor profile.

Use

Excellent as a base for kimchi rice, mixed into udon or ramen noodles, or in kimchi pancakes. It goes well with grilled dishes, in sandwiches, burgers, but can also be consumed on its own as a side dish.
