It underwent traditional 15-day fermentation in stainless steel tanks, followed by 12 months of aging in Burgundy oak barrels, 10% of which are new. This aging resulted in a rich, complex flavor profile, dominated by vanilla and delicate spicy notes. The wine's aroma blends white-fleshed fruits, floral aromas, almond, and fine spices, while its taste reveals freshness and mineral notes. It pairs excellently with fish dishes and light white meats.

Domaine Arnaud Baillot is a very young winery in Beaune, in the heart of Côte d’Or. It was founded in 2017 by Arnaud Baillot and his wife, Laure. Their mission is to showcase the complexity and diversity of the Burgundy wine region through their wines. They work on parcels of various classifications, carefully considering grape variety selection, barrel selection, and aging parameters. They avoid the use of new barrels and strive to interfere as little as possible with the development of the wines, in order to allow the imprint of the terroir to come to the forefront. They produce in small quantities, with only 2-3 barrels made of each of their wines, thus offering a truly unique and limited selection for wine lovers.
