For making fragrant meringues and pavlovas: Whisk 300 g of the mix with 90 g of warm water for about 10 minutes until you get a stiff and stable consistency. Put the mixture into a piping bag and create small spirals on a baking tray lined with baking paper. Bake in a preheated oven at 60-80°C for about 2 hours. (*Approximately 80 meringues, 2.5 cm in diameter, can be made.) Perfect for coating and decorating cakes: whisk 300 g of the mix with 90 g of warm water until the desired consistency is achieved. You can create decorations with a firm structure, yet deliciously soft. Ideal for stabilizing buttercream: use your usual recipe and add 30 g of the mix to 500 g of butter. This way you'll get perfect buttercream!
