Daruma pickled daikon (radish)

Daikon is an elongated, white radish variety that is popular in Asia, especially in Japan, China, and Korea. It has a milder taste than traditional radish and can be used in many ways. In Japan, the yellow-colored, sweet and sour pickled daikon is known as takuan, while in Korea it is used as danmuji, most often for kimbap or as a side dish.
