Olive oil is a greenish-yellow, characteristically scented, pleasantly sweet tasting, liquid vegetable fat at room temperature, produced mechanically (by pressing) from the stone fruit of the olive tree (Olea europaea), the olive.
It is one of the basic ingredients of Mediterranean cuisine. Nowadays, most olive oil is produced in Greece, Italy and Spain. It should not be confused with the oil (olive pomace oil or Sansa oil) produced by solvent extraction from the olive pomace (pomace) remaining after pressing, which is a cheaper and less enjoyable substitute for olive oil.
