Preparation of pulled pork

Pat the meat dry, season with salt and pepper, then rub with a mixture of smoked and sweet paprika, garlic powder, chili, and brown sugar.

In a large pot, heat a little oil and sear the meat until deeply browned on all sides. Remove the meat, and in the same pot, sauté the finely chopped onion until translucent. Add the crushed garlic and fry briefly.

Stir in the tomato paste, pour in the orange juice and water (or broth), then mix. Return the meat to the pot (it should not be completely submerged), cover, and simmer over low heat for about 2 hours, until the meat is completely tender and easily falls apart. Remove the meat and shred it into small pieces with two forks, or finely chop it to get a juicy mixture. If the sauce is too thin, boil it uncovered for a few minutes before returning the meat. Finally, season with salt and pepper.
