A quick and nutritious fish dish that looks like you ordered it from a restaurant – yet it's on the table in less than half an hour. The fresh lemon, dill, and creamy, garlicky pea puree perfectly complement the distinct flavor of the pollock. If you want to prepare something special even on weekdays, this recipe is for you.
Preheat the oven to 190 degrees Celsius (180 degrees Celsius for a convection oven). In a small bowl, mix the olive oil with the garlic, lemon juice, grated lemon zest, salt, pepper, and half of the fresh chopped dill.
Rinse the pollock fillets, pat them dry with a paper towel, then place them on a baking sheet lined with parchment paper. Generously brush both sides with the lemon and dill mixture.
