  • 50 g butter
  • 170 g cheddar cheese
  • 310 ml milk
  • 6 pcs eggs
  • 35 g fine wheat flour
  • 1 g chili spice
  • 2 g salt

    Grease 6 soufflé dishes, each with a capacity of 2.5-3 dl, with butter and place them on a baking tray.

    Separate the eggs.

    Preheat the oven to 190 degrees Celsius.

    In a small saucepan, melt the butter, then add the flour and stir until smooth and lump-free. Gradually pour in the milk, stirring constantly. Sprinkle in the chili and salt, then cook for 3-4 minutes until it thickens. Remove from heat.

    Stir in the grated cheese until completely melted. Taste and add a little more salt if needed. Finally, stir in the egg yolks.

    Whisk the egg whites until stiff peaks form, then gently fold them into the cheese mixture with a spatula, adding in several batches.

    Divide the mixture among the soufflé dishes, filling them about 3/4 full. Place the dishes in the oven and bake for 15-20 minutes, or until the tops are golden brown.

    Serve immediately, while hot.
