INGREDIENTS
- Diced bacon
- Olive oil
- Salt
- Black pepper
- Spaghetti
- 150 g smoked Kolozsvári bacon
- 4 pcs eggs
- 80 g Parmesan
PREPARATION
- 1Cut the bacon into thin strips, then fry until crispy over low heat in a little oil, and set aside.
- 2Fry the bacon slices until crispy.
- 3Meanwhile, cook the pasta al dente in salted, boiling water, drain, but reserve a little cooking water.
- 4Beat the eggs, season with salt and pepper to taste, then add the grated Parmesan.
- 5Place the cooked pasta into the pan with the bacon, mix thoroughly, then remove from heat. Pour in the egg and Parmesan mixture and some of the pasta cooking water, and when the pan has cooled slightly, return it to the heat. Stir continuously until it becomes silky and creamy.
- 6Serve with freshly grated Parmesan, a little olive oil, freshly ground pepper, and bacon crisps.
