  • Diced bacon
  • Olive oil
  • Salt
  • Black pepper
  • Spaghetti
  • 150 g smoked Kolozsvári bacon
  • 4 pcs eggs
  • 80 g Parmesan

PREPARATION

    Cut the bacon into thin strips, then fry until crispy over low heat in a little oil, and set aside.

    Fry the bacon slices until crispy.

    Meanwhile, cook the pasta al dente in salted, boiling water, drain, but reserve a little cooking water.

    Beat the eggs, season with salt and pepper to taste, then add the grated Parmesan.

    Place the cooked pasta into the pan with the bacon, mix thoroughly, then remove from heat. Pour in the egg and Parmesan mixture and some of the pasta cooking water, and when the pan has cooled slightly, return it to the heat. Stir continuously until it becomes silky and creamy.

    Serve with freshly grated Parmesan, a little olive oil, freshly ground pepper, and bacon crisps.
