INGREDIENTS
- 1 medium-sized (green) zucchini, grated
- 200 g fine spelt flour
- 50 g brown sugar
- 50 ml olive oil
- 2 eggs
- 1/2 packet baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1 handful raisins
PREPARATION
- 1Peel the zucchini and grate it into a large bowl.
- 2Add the rest of the ingredients and mix thoroughly with a spatula, then spoon the dumpling-like mixture into muffin tins lined with paper cases.
- 3Bake in a preheated oven at 180 degrees Celsius for 30-35 minutes, then let it cool.
