INGREDIENTS

  • 1 medium-sized (green) zucchini, grated
  • 200 g fine spelt flour
  • 50 g brown sugar
  • 50 ml olive oil
  • 2 eggs
  • 1/2 packet baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1 handful raisins

PREPARATION

    Peel the zucchini and grate it into a large bowl.

    Add the rest of the ingredients and mix thoroughly with a spatula, then spoon the dumpling-like mixture into muffin tins lined with paper cases.

    Bake in a preheated oven at 180 degrees Celsius for 30-35 minutes, then let it cool.
