Ingredients
- 1.5 kg potatoes for baking
- Herbs
- Spring onion
- Chives
- 100 g butter
- Dill
- Parsley
- Salt
- Pepper
Steps
- 1Cut the potatoes in half, the larger ones into 3-4 pieces, and cook them until tender in heavily salted water.
- 2Wash and chop the fresh herbs.
- 3Heat half of the butter and toss the cooked potatoes in it, then place them in a 180-degree oven until slightly browned.
- 4Meanwhile, heat the remaining butter and toss the herbs in it in a pan large enough to hold all the potatoes.
- 5Toss the roasted potatoes in the herb butter, season with more salt and pepper if needed, and serve topped with more fresh herbs.
- 6You can use any herbs, such as sage, basil, or tarragon, but if using thyme or rosemary, be careful as they have a very strong flavor.
