INGREDIENTS
- 4 good quality sourdough buns, rolls, or ciabatta
- 2 tablespoons mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 head of lettuce
- 2 nice tomatoes (approx. 200 g)
- 2 pieces pickled gherkins
- Mixed fresh herbs (e.g., dill, chives, parsley)
- 1 shallot
- 4 farm eggs
PREPARATION
- 1For the sauce, mix together the finely chopped shallots, pickled gherkins, a little dill and chives, ketchup, mayonnaise, and mustard.
- 2Slice the tomatoes into finger-thick pieces, season with salt and pepper.
- 3Shred the lettuce.
- 4Cut the buns in half and toast them.
- 5Fry the eggs sunny-side up.
- 6Serve the sandwich with the freshly fried warm eggs.
Tip
You can also fry sliced bacon and add it. The sauce is also a perfect choice for hamburgers and can be stored in the refrigerator for a few days. If you don't have buns, this breakfast is also perfect between two slices of sourdough toast.
