This Hungarian dark chocolate tonka bean tart from A kis pékinas is an indulgent pastry treat, 170 g. It features a crisp shortcrust base made with quality butter and flour, filled with a silky, creamy chocolate cream infused with grated tonka bean. Finished with a glossy cocoa glacage, it offers delightful vanilla and bitter almond notes.

Tonka bean dark chocolate tart
The dessert consists of a shortcrust pastry base made from a basic good quality flour and butter, which is filled with a silky, creamy chocolate cream. The tonka bean is a fragrant, intoxicating, complexly flavoured spice, in which the notes of vanilla and bitter almond are most prominent, and it creates perfect harmony with chocolate.
The cream is made from very good quality milk chocolate, which has an intense chocolate flavour due to its high cocoa content, and the tonka bean is grated into this. The shiny top layer of the dessert is a so-called glacage, or coating: this is not made with chocolate, but with good quality cocoa powder (and cream and glucose syrup).
The end result is mouth-watering!
The French word tarte translates as pie or tart. It was first made in 1550. At that time, it was popular among the aristocracy, unlike the common pie.

Producer information
Gábor Kauser and Gábor Ellenrieder opened their bakery in the 1st district in December 2017, the idea for which came to them during a trip to Paris, where they thought that a place similar to the local boulangeries (bakeries) and pâtisseries (pastry shops) should be opened in Budapest too. When opening the shop, they received a lot of help in developing the recipes from master confectioner Stephane Gerphagnon, and the small French-style bakery on Mészáros utca soon became a favourite among the people of Buda.

In the artisan bakery, the sourdough breads, baguettes, pastries and French cakes are produced every day by two bakers and a confectioner. They work with good quality Hungarian and French ingredients, and all their products are made on site. It is also a show bakery, so anyone can follow the work of the confectioner and the bakers through a glass wall. Of their 30-35 bread recipes, they bake 4 different types every day. Semi-brown bread and baguettes are always on offer, while the others are in constant rotation, and the variety is not only evident in the breads, but we can always expect something new in terms of bakery and confectionery products too.
