Seven Hills Tokaj gin 

Using 21 special spices, it creates a perfect harmony between the woody-floral scents of the Zemplén forests and fields, complemented by citrus fruits and one of the important ingredients of Tokaji Aszú, the linden leaf grape. Leading spices in addition to juniper are Moroccan coriander, blackcurrant, pink grapefruit, cubeba and rose pepper, Zemplén forest pine bud, sea buckthorn and of course linden leaf grape and elderflower. Long, complex gin, where you will immediately feel from its scent that this is something completely different from what you have felt or thought about gins so far. Its special feature is also that the fermentative aroma, which is based on the separate fermentation of the individual ingredients, is fundamentally alien to the world of gins. The linden leaf grape and the elderflower are also added to the flavors and scents swirling in the cauldron after being fermented and distilled separately. It is made with a single-cycle, column distillation technology, where some of the spices are soaked in the cauldron for 24 hours, then on the following distillation day the macerate is enriched with additional spices, and the fresh ingredients are placed in a special steam basket. Thus, their single-cycle distillation method actually combines several technologies, and gives a very complex end result. Its special feature is also that the fermentative aroma, which is fundamentally alien to the world of gins, is based on the separate fermentation of the individual ingredients, but in this case it is realized with two ingredients, as the linden leaf grape and the elderflower are also added to the flavors and scents swirling in the cauldron after being fermented and distilled separately.

"Seven Hills Distillery is a small craft gin and whiskey distillery in Tokaj-Hegyalja, where our small series products are made in a wonderful natural environment. We basically came to Hegyalja because of whiskey making, because in many respects this area is the most suitable in the country for making premium spirits. We opened our distillery in the autumn of 2020, a small, simple Zemplén peasant house, where you can gain insight into our technology and raw materials. We have specially designed our distillery equipment purchased in the Netherlands to meet the needs of gin and whiskey making, using a single-cycle distillation method. We combine the traditions and special microclimate of the Tokaj wine region with modern technology, as a result of which we produce unique spirits that are recognized internationally! We buy everything we can from local farmers, be it raw material or barrels for aging, so the spirits we make faithfully represent the traditions of Hegyalja and show a much brighter future, because Hegyalja has not been just about wine for a long time! With healthy maximalism, we strive for perfection, and we do not settle for less!"

Usage information

The Gin is recommended to be consumed in G&T with a few pieces of Artificer ice and G&T spices. They do not use anything else as G&T spice, just blackcurrant and dehydrated or fresh pink grapefruit.

Storage

Store in a dry place, at room temperature, protected from direct sunlight.
