Blanched almond kernels. Peeled, skinless almond kernels, deprived of the thin, membrane-like inner skin. Blanching is essentially a kitchen process in which the raw material is pre-cooked, heat-treated, and then quickly cooled down, thus stopping the cooking process. In many places it is also called scalding or shocking, as the pre-cooking takes place in boiling water, but only for a relatively short time, so the raw material is really only shocked, not fully cooked.
If you follow a paleo or gluten-free diet, you have probably come across recipes that use blanched almonds or almond flour instead of traditional fine flour.
