Red, yellow and brown snack tomatoes, which will make your favorite salads even more colorful. It is also excellent for pasta and as a side dish, but as its name suggests, it is also tasty as a snack on its own.

Suggested use - Summer salami zucchini tomato pizza
Ingredients for 6-8 servings
- extra virgin olive oil
- 2 packages of store-bought pizza dough, at room temperature
- 450 g fresh, whole milk ricotta
- 1 1/2 teaspoons kosher salt, divided
- 1 teaspoon freshly ground black pepper
- 100 g thinly sliced salami
- 1 medium shallot, finely chopped
- red wine vinegar
- 2 medium zucchini (about 450 g total), thinly sliced lengthwise on a mandoline or vegetable peeler
- snack tomatoes, halved
- 20 g basil leaves
Preparation
- Preheat the oven to 215°C. Grease a 45x33 cm baking sheet with 1 tablespoon of oil. Carefully roll out the dough into an oval and place it on the prepared baking sheet, pressing the dough into the edges of the sheet (if the dough retracts, cover with foil and let rest for 10 minutes before rolling out again). Brush the dough with 1 tablespoon of oil and bake until golden brown and dry, 15-18 minutes.
- Meanwhile, whisk together the ricotta, 1 tablespoon of oil, 1 teaspoon of salt and 1/2 teaspoon of pepper in a medium bowl until the mixture is slightly foamy and fluffy. (If the ricotta is drier, add another tablespoon of oil.)
- Spread the ricotta mixture over the dough, leaving about 1 cm of space on all sides. Top with a layer of salami, overlapping slightly if necessary. Bake the pizza until the ricotta mixture is golden brown and the edges of the salami are curled up and crispy, about 15 minutes.
- Combine the shallot, vinegar and 2 tablespoons of oil, 1/2 teaspoon of salt and 1/2 teaspoon of pepper in a small bowl. Gently toss the zucchini, tomatoes and basil in a large bowl. Pour over about a third of the dressing and toss again. Pile onto the pizza. Drizzle the remaining dressing over the pizza and cut into slices.

The aim of the Association for the Living Tisza is to improve the livelihood of those living in the Tisza River basin, to increase flood and environmental safety, to preserve and enhance the ecological values of the Tisza, so that the inhabitants of this region can live in good quality of life and safety. The Association wants to spread farming patterns that implement the sustainable coexistence of man and river: they correspond to the characteristics of the landscapes, enhance the rich diversity of life and promote the well-being of the people living in the landscape. In order to achieve this goal, they have called for cooperation from the local governments, farmers, representatives of science, civil organizations and anyone who wants to do something for the prosperity of this region. They work not only for the Tisza and its floodplain, but also for the people living in the valleys of the tributaries, such as the Túr, the Szamos, the Kraszna, the Bodrog, the Hernád, the Sajó, the Körös, the Maros, the Zagyva. This natural unit, the Tisza Plain, one third of Hungary's territory and the areas falling within the watershed of the Carpathian Mountains - after Széchenyi - is uniformly called the Tisza Valley. This is the primary area of operation of the SZÖVET.
The task is not small: the region is regularly threatened by floods, waterlogging, drought, our natural values are in danger, but the economically and socially worst-off regions of the country are also found here. Unemployment is significant, incomes are low. The proportion of elderly people in the population of villages is increasing, and many young people are moving away. The institutions of small settlements (kindergarten, school, doctor's office, post office) are being closed down in more and more places. In many places, railway traffic has been eliminated, and in many places even the bus service has been eliminated.
All these problems are not independent of each other. SZÖVET wants to develop and implement solutions that are capable of addressing these problems in a unified manner. The key to the development of the Tiszavölgy is for those living here to manage the opportunities offered by nature wisely. This can bring better livelihoods, enhance our natural values, and even help to balance out the difficulties caused by extreme weather. The Association tries to help not only in theory, but also in everyday life, so that all this can be not a dream, but a reality.
