Preparing beef brisket does not require much work, but it does require patience. The meat is matured for 10-14 days using the so-called dry ageing method, under strict hygiene and cooling measures, which fully comply with all standards and conditions for the production of certified and wholesome organic food and products. They are subject to strict and regular veterinary supervision, which guarantees the highest hygiene and health safety. Origin of the meat

The organic quality meat comes exclusively from ecological farms, where the animals are fed with natural, plant-based food and never come into contact with pesticides or artificial fertilizers during their lives. The taste, smell, appearance and durability of the meat are not influenced by chemicals or artificial additives, which can be harmful to the human body. Consumers of such meat products are guaranteed quality food that not only protects their health, but also far surpasses traditional meat in terms of taste and appearance.

Preparation time: preparation 45 minutes + resting 15 minutes + baking approx. 5 hours

Ingredients for 6 people

  • 1/2 beef brisket whole approx. 1.25 kg
  • 450 g onion
  • 3 pcs carrots
  • 2 cloves garlic
  • 2+1 tbsp. fat or oil
  • 2 tsp. salt
  • 1 tsp. ground pepper
  • 1.5 tbsp. flour
  • 2 tbsp. tomato paste

Preparation

  1. Preheat the oven to 175 degrees.
  2. First, cut the fattier, sinewy parts off the brisket. If there is pure fat on it, you can leave it on, but remove the tendons and membranes as much as you can.
  3. Prepare the vegetables: cut the 450 g onion into wedges (or thicker slices), the 3 carrots in half or quarters, and the 2 cloves of garlic in half.
  4. Salt and pepper the meat well on both sides.
  5. Sprinkle flour on both sides of the meat. You will need about 3/4-3/4 tablespoon of flour per side.
  6. Heat a large baking sheet on the stovetop until it smokes. Add 2 tbsp. of fat or oil and let it heat up on the highest heat.
  7. Put the meat in and fry for 3-4 minutes on one side, then turn it over and fry for 3-4 minutes on the other side, shaking the baking sheet occasionally. It will be delicious if the meat is heated in some places.
  8. Remove the meat to a plate.
  9. Add +1 tbsp. of fat or oil to the baking sheet, add the onion and fry on medium heat, stirring occasionally, for 7-8 minutes.
  10. Pour in 1/2 dl of water, fry for another 2-3 minutes, stirring occasionally. The onion should be nicely browned and caramelized.
  11. After about 10 minutes, pour in another 2 dl of water and turn off the heat.
  12. Put the meat on top, pour in the meat juice that it released onto the plate. Surround with the carrots and garlic. Spread 2 tbsp. of tomato paste on top of the meat. Cover tightly with aluminum foil and place in the oven.
  13. The brisket will be ready in the oven in 5-6 hours. Remove from the oven and let it rest covered for at least 15 minutes.
  14. Remove the meat to a bowl where you can slice it, but set it aside for now. Remove the carrots as well and set aside.
  15. Press the remaining onion sauce through a fine sieve using a spatula. You can press almost all of the onion through, resulting in a thick sauce.
  16. Slice the meat into thin slices. Serve on a large platter, with or without the carrots as desired, drizzled with a little sauce. Serve the remaining sauce in a separate bowl!
