Origin of the meat

Organic quality meat comes exclusively from organic farms where animals are fed with natural, plant-based food and never come into contact with pesticides or fertilizers during their lives. Preparation time: preparation: 15-20 minutes + baking: 3-4 hours

Ingredients for 2 people

  • olive oil
  • 6 thick, meaty spare ribs - 6 rib bones
  • 1 large head of garlic, halved horizontally
  • 1 heaped tablespoon of tomato puree
  • 750 ml red wine
  • 1 liter beef stock
  • 150 g pancetta - or diced unsmoked bacon
  • 250 g small, brown mushrooms, cleaned and halved
  • sea salt and freshly ground black pepper
  • chopped parsley

Preparation

  1. Preheat the oven to 170 degrees - third level on a gas oven. Heat a high-sided baking tray on the stove and add a little oil. Season the spare ribs with salt and pepper and brown evenly for 10-15 minutes.
  2. Place the garlic - cut side down - in the baking tray. Add the tomato and fry for a minute or two. Pour in the wine and scrape up the stuck bits. Bring to a boil and cook for 10-15 minutes until the liquid has thickened by half, then add enough stock to almost cover the meat - if you are using a smaller baking tray, you will need less stock. Bring to a boil and baste the meat several times with the juice.
  3. Cover the baking tray with aluminum foil and place in the preheated oven for three to four hours, or until the meat is tender and falls off the bone - basting several times in between. Ten minutes before the end of the cooking time, fry the bacon until golden brown and crispy for two to three minutes. Add the mushrooms and fry for four to five minutes. Place on paper towels and drain the oil.
  4. Once the meat is cooked, remove it and place it in a serving dish. Squeeze the garlic out of its skin and pass it through a sieve. Skim off the excess fat from the cooking liquid, strain the juice and mix with the garlic - if the sauce is too thin, thicken it by boiling for 10-15 minutes after straining. Spoon the fried bacon and mushrooms over the spare ribs, pour the sauce around and serve sprinkled with parsley.
