Gyermelyi 4-egg Csusza

Description
Csusza pasta is the basis of traditional túrós csusza, but it can also be cooked in lebbencs soup. Due to its arched shape, it does not stick together after cooking, making it easy to handle.

Ingredients
250 g Gyermelyi 4-egg csusza, 2x100 g smoked bacon, 600 g filleted catfish, 2 onions, 1 tomato, 1 green pepper, 200 g cottage cheese, 2x2 dl sour cream, 1 tablespoon flour, salt, paprika, hot paprika.
Preparation
- Finely chop the bacon, melt it, then sauté the cleaned and finely chopped onion on it. Sprinkle with paprika, stir and pour water over it. When it boils, reduce heat, add the sliced tomato, hot paprika, bell pepper, and if you have any, the fish pieces that have fallen off. Salt and cook for 15-20 minutes.
- Mix 1 dl sour cream with flour and a little water, then thicken the sauce with it. Bring to a gentle boil, then strain through a fine sieve.
- In a larger pan, fry the washed and dried, larger pieces of salted fish fillets in oil. Be very careful not to break the fish. When both sides of the fish are whitish, pour the strained sauce over it. You can also add a few cloves of peeled tomato. Simmer together. Season if necessary and serve. When serving, pour the remaining sour cream over the top.
- For the side dish, melt the finely diced bacon, then drain. Mix the cooked, drained pasta with the drained fat, salt, cottage cheese and sour cream. Brown in a heatproof dish in a hot oven, then serve with the catfish, with the fried bacon on top.
Or serve with liver gizzard stew!

In addition, it carries out agricultural activities on 8,800 hectares, operating a closed vertical integration. It all started on January 21, 1953, when twelve farmers from Gyermely, unable to bear the increasingly impossible burdens of individual farming, founded the Petőfi Cooperative. In 1970, the government decided to build a pasta factory, for which they were looking for a location. Gyermely's reputable cooperative undertook the task and was given the opportunity. This is how Gyermelyi Zrt. was founded.
