The most delicious part of the plant is its tip. Cut this off with a knife just below the tip, by a maximum of one centimeter, and set aside. Grasp both ends of the remaining stem and bend it gently. It will break based on which part is fresher and which part is harder: the side closer to the tip is more tender, the other half is more woody. This latter part must be peeled thoroughly, but towards the end of the season it can no longer be used, it is so woody. The rest of the parts only need to be peeled thinly.
