Bonduelle Sliced Pickled Beetroot

Ingredients (for 4 servings)
1-2 slices of white-fleshed pickled fish (e.g., herring), 1 large glass of natural yogurt, 8 slices of wholemeal bread, olive oil, lemon, and fresh parsley for serving, 1 jar of Bonduelle pickled beetroot.
Preparation
- Drain the fish and cut it into smaller pieces. Prepare the beetroot similarly.
- Place in a bowl and add the yogurt. Mix thoroughly.
- Place 2 slices of bread per person in the middle of a plate. Pile the fish on one half of the bread and the beetroot on the other.
- Finally, drizzle with a little olive oil and lemon juice to taste, and garnish with chopped fresh parsley.
