Fresh yeast has a cube shape, as we pressed it together. This is the most well-known type of yeast. Good quality yeast can be recognized by its light beige color, grayish shade.
Its taste is slightly sour, its smell is characteristic, slightly fermented. Its material is uniform, flexible and can be broken like a shell.
When baking, about 4-10% yeast should be added to the amount of flour used. This means that for 1 kg of flour, you will need about 1 cube of fresh yeast (50 g), or 2 sachets (14 g) of dried yeast. However, the amount of yeast to be used always depends on the recipe.
It is important to always store it in a cool (2 – 8 ℃) and dry place. It should not be forgotten that yeast is a living material. Therefore, do not leave it unpacked in the refrigerator, as it will be exposed to cross-contamination! Once opened and unused yeast should be wrapped in plastic wrap or aluminum foil and used within a short period of time!
Before baking, if you want to dissolve the yeast, never crumble it into hot water or milk! The optimum temperature of the liquid is 36-37°C, the warmer liquid destroys the yeast fungi, the colder one slows down the leavening. Here are some more important tips:
- do not put too much sugar in the liquid, because unfortunately too much sugar can also kill the yeast fungi.
- it is not advisable to bring the yeast into direct contact with the salt, because it will dissolve it, so always mix the salt with the flour beforehand.

Consumable: stored between +2 - +8°C until the date indicated on the packaging.
