Ingredients
1 kg venison, 2 medium red onions, 3 cloves of garlic, 1 medium carrot, 2 tbsp lard, 3 medium peppers, 2 medium tomatoes, 50 g smoked bacon, 3 bay leaves, 6 juniper berries, 1 teaspoon thyme, 2 tbsp paprika, 2 dl dry red wine, 3 tbsp jam (preferably homemade, blackberry, blueberry), pepper to taste, salt to taste, 2 dl water.

Preparation

  1. Clean the meat, skin it and dice it into 2 cm pieces. Clean and chop the carrots as well. Crush the juniper berries with the blade of a knife.
  2. Dice the bacon and fry it in the fat, then add the diced red onion, crushed garlic, carrots, peppers, and sauté.
  3. Then add the meat, spices and the sliced tomatoes, salt, and steam until the meat turns white. If it has boiled away its juice, sprinkle with paprika, pour in red wine, and simmer until the meat is tender.
  4. Replace the boiled away juice with water. When the meat is tender, stir in the blackberry jam and serve.
