A special variety grown on the islands of the West Indies has a peel called the Curaçao peel, from which the liqueur known as "Curaçao" is made. Due to its medium pectin content, thicker jam and preserves can only be made with a longer cooking time, by adding other high-pectin fruits or gelling agents.
Use
Oranges can be eaten on their own, mixed into fruit salads, or made into jam. Their freshly squeezed juice can be drunk, and they can be used to flavour cakes and pastries, as well as their grated peel. Oranges also go excellently with certain meats (e.g. chicken, duck, fish).
