Aged beef striploin (Striploin) from Argentina
This cut of meat is located on the back of the cattle, moving towards the rump. The T-Bone and Porterhouse steaks also come from this area, which are processed with bone and tenderloin. Striploin slices are usually leaner, do not contain a pronounced fatty "eye", and are juicier than ribeye.

When the Spaniards first brought cattle to Argentina in the 16th century, the animals must have felt like they were in paradise. The Argentinian prairies seem endless, largely flat areas where the humid and temperate climate provides a perfect environment for raising cattle. Beef breeds such as Angus and Hereford have adapted perfectly to the pampas, where they could graze freely and abundantly, resulting in tastier and more nutrient-rich meat.
The cattle were fed high-calorie grains for up to 100 days to achieve the perfect intramuscular fat distribution, or marbling. This feeding process ensures the exceptional juiciness that beef lovers appreciate so much.

Usage
You can grill a perfect steak from this meat. In traditional Brazilian steakhouses, waiters come to the tables with large knives and skewers, on which they offer various premium cuts of meat. This serving method is known as "rodízio" or "rodízillo".
