Baby Spinach
Spinach is a descendant of the sea beet, a wild seashore plant found along the Mediterranean and Atlantic coasts of Europe and North Africa. Through mutation and selective breeding, varieties have been developed that have broader leaf stalks, milder flavours, adaptability to soils and resistance to diseases. Baby leaves are picked from the tender inner heart where flavours are sweetest and textures are at their finest.

Spinach is known to be a nutrient-rich vegetable, packed with vitamins, minerals and health benefits. Baby spinach is high in vitamin C, K and E, beta-carotene, calcium, and the minerals manganese and zinc. Its mildly sweet flavour is reminiscent of spinach and slightly earthy, with sweet, nutty undertones.
Suggested use
Baby spinach can be used in any recipe that calls for spinach or kale, especially when raw, and is often found in salad mixes to add a sweet, earthy flavour. It can also be cooked with other greens, such as mustard, arugula, chicory, spinach, red and green lettuces. It is best to lightly steam or wilt it in olive oil, if cooking it at all. It can be paired with flavours such as poultry, pork, creamy, melting, aged and blue cheeses, butter, eggs, olive oil, avocado, nuts, citrus, mango, chilli, garlic, pulses, farro, sausage, bacon, mushrooms, ginger, fennel and shallots.
