Radicchio round Chioggia

A chicory variety originating from Italy. The purplish leaves of radicchio are variegated with white veins, and its taste is slightly bitter, peppery.

Interesting fact

The purplish leaves are achieved by a special procedure: the plant is removed from the soil and placed in a container filled with water in a dark place for a while. This causes it to lose its chlorophyll pigments and turn purple. 

Use

It is usually consumed in salads, mixed with other, less intense-tasting salad leaves, in Italy it is also prepared on the grill, as grilling softens the slightly bitter taste of the plant. It is also used to flavor risottos, pasta, pizza, but it can also be used well in poultry stuffing.

Storage

Store in a dry, cool place between 5-10 °C.
