What is Dijon mustard?

The most famous French mustard, which the mustard manufacturer Jean Naigeon began to age in grape must instead of vinegar in 1752. This is how the characteristic flavour of the still popular Dijon mustard was born. In 1937, after a major court case in which two Parisian and two Dijon mustard manufacturers clashed over the use of the word Dijon, the court ruled that the name Dijon was not tied to a geographical location, but to a recipe.

Maille has been producing mustards, salad dressings, culinary gifts and oils since its foundation in 1723. It originates from France, more precisely from Marseille, and is a subsidiary of the multinational consumer goods company Unilever, which produces its mass-produced products from real plants. In addition, the original Maison Maille continues to operate with its original purpose, making traditional Dijon mustard to this day.
