When buying raw chicken, the most important consumer considerations are the colour, texture and fat content of the meat. Increasing emphasis is being placed on the meat having a healthy, characteristic colour depending on the keeping system, and being slightly darker in the case of free range. In our country, yellow-skinned chicken is traditionally the most popular, which is one of the hallmarks of free range, corn-fed chicken, however these colour shades can now be artificially created using various natural colourings, such as carotenoids. The basic criterion for the colour of the meat is white or pale pink.
