Recipe
Tomato bagel
30 g Philadelphia lactose-free
10 x cherry tomatoes, mixed colours
1 teaspoon olive oil
ground black pepper
1-2 sprigs fresh mint leaves, optional
1 x wholemeal bagel
1 x handful baby leaf salad, to serve
1 teaspoon olive oil, to serve
0.25 x fresh lemon, to serve
Preparation
1. Halve the cherry tomatoes and place in a small bowl. Drizzle over 1 teaspoon of olive oil, season to taste, then set aside until ready to serve.
2. Halve the bagel and spread both sides with Philadelphia. Then top with the marinated cherry tomatoes, season with black pepper and a little chopped mint. Serve immediately on a bed of salad leaves, drizzled with a teaspoon of olive oil and a squeeze of fresh lemon.
