Nativus Whole Roe Deer Leg

Roe deer leg in game sauce
Ingredients
- 1 carrot
- 1 parsnip
- 1 medium onion
- 3 cloves of garlic
- 3 bay leaves
- 3-4 sprigs of thyme
- ½ celery root
- ¼ lemon zest
- 1 dl white wine
- 1 dl water
- 2 juniper berries
Game sauce
- 1.5 dl cooking cream
- 1 tablespoon mustard
- granulated sugar, salt, pepper to taste
Preparation suggestion
Peel and cut the onion, garlic, carrot, parsnip, and celery root into equal pieces. Prepare a white wine marinade from all the ingredients: mix the chopped vegetables, spices in the white wine marinade, then put the meat in so that the marinade completely covers it. Place in a sealable container in the refrigerator for a few hours, but preferably overnight. Remove the roe deer leg from the refrigerator and drain it together with the vegetables, and keep the drained marinade. Season the meat with salt and pepper, and brown it thoroughly in a hot pan with a little oil. Then do the same with the vegetables separately. Then place the meat, vegetables, marinade and spices on the meat in a covered fireproof dish. Steam until tender in an oven preheated to 180 °C, checking the meat from time to time with a meat skewer. When the meat is done, remove it from the dish and also remove the spices. For the game sauce: put the remaining vegetables and the roast juice in a blender, add the cream, mustard, and blend until smooth. Pour the sauce into a pan and heat it up. Sugar, salt and pepper can be added to taste. As a side dish, you can offer potato croquettes or napkin dumplings.

Their Sous Vide Fallow Deer Leg product won the Grand Prize I. of the Food Industry at the 80th National Agricultural and Food Industry Exhibition (OMÉK) held within the framework of the World Hunting Exhibition in 2021.
