Venison leg steak with blueberry ragout
Ingredients
- salt, pepper to taste
- 2 dkg butter
- 1-2 sprigs of thyme
- 1-2 cloves of garlic
Blueberry ragout
- 2 tablespoons brown sugar
- ¼ lemon juice
- 1 tablespoon blueberry jam
- pinch of salt (very little)
- 50 ml water
- 125 g blueberries (fresh or frozen)
For thickening
- 10 g starch + 25 ml water
Preparation suggestion
Take the venison leg out of the refrigerator and let the meat reach room temperature. Preheat the oven to 180 °C. Rub the meat with salt and freshly ground pepper. Take a pan and heat a little oil in it. Fry both sides of the meat for 2-2 minutes. In the last 1 minute, add a little butter, the thyme sprig and the crushed garlic cloves to the pan and finish frying. Then place the meat in a baking tray, pour the juice from the pan over it, put the thyme sprig and the garlic cloves on top of the meat. Bake in the oven for 8-10 minutes, then remove and let rest for a few minutes. For the blueberry ragout, caramelize the brown sugar in a pan, then add the lemon juice, blueberry jam, a pinch of salt and the 50 ml water. Once the base has boiled, add the blueberries. Cook for a few more minutes. Finally, thicken with the starch mixed with water - until it boils. As a side dish, you can offer potato croquettes or potato doughnuts.
