IDS Protected Designation of Origin Roquefort blue-veined ripened fatty soft sheep's cheese
Roquefort, which Diderot and d'Alembert called the king of cheeses, is the oldest protected designation of origin, which it received in 1925. Before that, it was made from goat's and sheep's milk. Today, it is made exclusively from the milk of Lacaune ewes. Legend has it that Roquefort was born by accident: a shepherd once forgot his bag in a cave. When he returned some time later, his bread was mouldy and his sheep's cheese had turned blue. In reality, it is now believed that the veins that appear randomly in this cheese were due to the mixture of goat's and sheep's milk.
