Serving suggestion: Tenderloin medallions with white wine forest mushrooms

Preparation time: 20 minutes preparation + 20 minutes baking

Ingredients for 2 servings

  • 1 shallot
  • 1 clove of garlic
  • 6 tablespoons of olive oil
  • 10 dkg mushrooms
  • 1 dl white wine
  • half a bunch of parsley
  • 4 tablespoons of cooking cream
  • 1 egg yolk
  • 500 g beef tenderloin
  • 10 dkg grated Parmesan cheese
  • salt to taste
  • pepper to taste

Preparation

  1. You will need a tenderloin of about half a kilo, from which you cut off the thinning end, then sprinkle the meat with a little freshly ground pepper the night before use, brush it with olive oil, wrap it in cling film, and then cover it with a layer of aluminum foil. Try to shape it into a perfect cylinder. Once you have done this, put it in the refrigerator and forget about it for at least a day.
  2. Finely chop the onion and garlic, then fry in a little olive oil for five minutes. Add two more tablespoons of olive oil, and then add the forest mushrooms.
  3. Fry the mushrooms for seven minutes, then add the white wine (in which the mushrooms have soaked, if made from dried mushrooms), and simmer the sauce while stirring continuously.
  4. Remove from heat, stir in the cream, finely chopped parsley, then the egg yolk. Cover and let stand while preparing the meat.
  5. Carefully cut the tenderloin into 4 cm slices - three coins come out of a half-kilo piece. Brush with oil, season, and fry in a heavy skillet in a little olive oil for 2-3 minutes, heating the oven to 200 degrees in the meantime.
  6. Put the mushrooms on top of the meats, sprinkle with grated Parmesan cheese, and bake in the oven for five minutes, serve immediately. If done well, the tenderloin will be crumbly and juicy, to which the forest mushroom sauce will add an intense flavor.
