HúsSzabóság Sliced Pork Neck
100% Hungarian quality. The pork comes from a reliable, responsible domestic farm, and its production is subject to regular, strict and continuous monitoring. Consuming pork is not only a gastronomic experience, but its richness in nutrients makes it an important source of minerals, fat, protein and vitamins. The neck is a part of the pig located between the head and the loin, with fat marbling. It can be used for roasting whole, sliced, breaded or smoked.

Usage suggestion: Pork neck marinated in beer with cabbage noodles
Preparation time: 90 minutes
Ingredients for 2 people
- 2 x 160 g slices of HúsSzabóság pork neck
- Salt
- Coarsely ground pepper
- 1 tablespoon olive oil
- 200 ml light beer
- 1 clove garlic
- 1 sprig rosemary
For the noodles
- 250g peeled potatoes
- Salt
- 50 g butter
- Half an egg
- 85-90 g strudel flour
- Oil for frying
- 1/2 bunch chives
For the cabbage
- 1 onion
- 1 tablespoon olive oil
- 2 tablespoons sugar
- 1 pinch ground pepper
- 1 pinch ground cumin
- 1/2 head of kale (approx. 300g)
- 50 ml water
- 1 pinch salt
- 2 teaspoons apple cider vinegar
Preparation
- First, prepare the side dish for the beer-braised pork neck! For the noodles, cut the potatoes into equal-sized cubes and boil them in plenty of salted water until soft.
-
Meanwhile, slice the onion and fry it in a pan over medium heat in the oil until translucent. Sprinkle with half of the sugar, the cumin and the pepper, and let it caramelize a little. Add the thinly sliced cabbage, pour in the water, and braise for about 20 minutes, covered. Finally, season with salt, sugar and apple cider vinegar.
-
Mash the boiled potatoes, then add the butter, the egg and the flour. Form the dough into noodles and cook them in plenty of salted, boiling water for 5-6 minutes.
-
Fry the cooked noodles in a hot, lightly oiled pan, then add the cabbage, stir and sprinkle with the chopped chives. Keep warm!
-
For the beer-braised pork neck, season the meat slices with salt and pepper, and fry both sides in a pan heated over high heat in olive oil. Then pour in the beer, add the garlic and the rosemary, and braise for about 10 minutes, covered. Finally, evaporate the beer without a lid and you can serve it with the cabbage noodles.
