Whole pork tenderloin matured in a marinade reduced with honey, red wine, thyme, and balsamic. Its flavour profile is pleasantly sweetish.
Preparation suggestion
Place the pouch in approx. 60-degree water for 5 minutes (to regenerate), then in a heated pan with a minimal amount of oil, sear the tenderloin all around to form a nice crust. After this, place the tenderloin medallions on a plate, pour the honey and red wine marinade from the pouch into the pan, and heat it until it thickens, then drizzle it over the plated meat.
