Preparation suggestion

Try this delicious recipe for sea bass in French style:

Soak the pearl barley in cold water for 4-5 hours, then cook it in salted water for about 40 minutes. Score the skin side of the cleaned fish fillets slightly, then salt them on both sides and drizzle with lemon juice; set aside. Cut back the stem of the fennel a little, cut out the core, and chop the rest to your liking. In a large skillet, sauté the chopped fennel in a mixture of olive oil and butter for 5-10 minutes, then season with salt and pepper, add the frozen peas, pour in the wine, add 1-2 lemon slices and a bay leaf and simmer until tender; add water as needed, but so that by the time it's done, it's softened, with only a minimum of juice left. Pat the fish fillets dry with paper towels, season with pepper and first fry them skin side down, then turn them over and fry them in hot olive oil for a few minutes until nicely browned. Before serving, stir the pearl barley into the hot green pea ragout, then remove from the heat and stir in 1-2 tablespoons of butter. Garnish with grated lemon zest when serving.
