Alnatura vegan egg replacer
For the preparation of vegan dishes. This egg replacer is made from sweet lupine flour, one package can replace three eggs. All ingredients of the vegan, tasteless Alnatura egg replacer come from organic farming. Its use is very simple: Mix one teaspoon of egg replacer (approx. 5 grams) with 50 ml of mineral water - this replaces an egg in the recipe.
Application - Vegan waffles with hazelnut nougat sauce and banana

- Total: 1 hour 40 minutes
Ingredients
For 6 servings:
- 300 ml oat drink (waffle: 250 ml, sauce: 50 ml)
- 1 packet of Alnatura dry yeast (baking yeast)
- 50 g Alnatura raw cane sugar
- 375 g 550-type Alnatura wheat flour
- 1 packet of Alnatura vegan egg replacer
- 150 ml carbonated mineral water (room temperature)
- 125 g Alnatura margarine (room temperature) + something for the waffle iron
- 1 teaspoon of Alnatura grated lemon zest
- 1 pinch of Alnatura sea salt
- 125 g Alnatura hazelnut nougat cream (vegan)
- 2 bananas
Preparation
- Gently heat 250 ml of oat drink. Add yeast, sugar and 75 g of flour, mix into a pre-dough and let rise covered for 10 minutes.
- In the meantime, thoroughly mix the egg replacer with the mineral water and let it swell.
- Add the margarine, mixed egg replacer, the remaining flour, lemon zest and salt to the pre-dough and create a viscous dough with the hand mixer's whisk. Cover and let rise at room temperature for 1 hour.
- If necessary, grease and preheat a waffle iron for Belgian waffles. Put 4 tablespoons of dough in the middle of the waffle iron per waffle, close the lid and bake for about 4 minutes until the waffle is golden brown. Lift the waffle out and let it cool on a wire rack.
- Slowly heat the remaining oat drink and the hazelnut nougat cream in a pan, then mix together to create a sauce consistency. Peel the banana and cut it into thin slices diagonally.
- Drizzle the waffle with the hazelnut nougat sauce, place the banana slices on top and serve immediately.
