Fermentini - Blueberry Red Cabbage

Red cabbage is rich in vitamins C, K, and A, and its flavour is enhanced by the whole blueberries left in the jar. During the natural fermentation process, the vitamin and mineral content is preserved, and the body can even absorb them more easily than in their raw form. A playful, light, delicious flavour profile, it can be a worthy accompaniment to any main meal.

We primarily recommend it as an addition to side dishes, or for wraps, sandwiches, or burgers.

After opening, it keeps for 2 weeks in the refrigerator.

Producer Information

It so happened that due to health concerns within our own small family, the wonderful world of fermented foods crept into our lives. This was also a knowledge-sharing experience among friends, mothers who keep their kitchens open to all sorts of healthy novelties. Last year was spent trying out countless recipes, discussing them, playing with vegetables, fruits, and spices, creating some really good things, and well... some bad ones too. For us, the many delicious flavours and discoveries brought a series of 'aha' moments, and we saw among our friends and extended family that we were able to show them something new and tasty.

On a beautiful autumn day of gathering and chatting, the idea came to us that we would like to get more seriously involved with fermented vegetables, because we see a future in it. Besides being delicious, it's also extremely healthy, a continuation of a tradition, yet innovative. And with that, countless questions arose. How? Where? What do we need (or would we need) for it? What principles should we build upon? Sustainable, as local as possible, 'free-from-everything', vegan... The spark ignited and set off on its own path, and we started working for it. We read a lot, researched, analysed international examples, started targeted experimenting, developing recipes, and pestering family and friends with tastings. Along the way, the name Fermentini and our wonderful logo were born. Thus, after much deliberation and answering many questions, the moment arrived when we could hold our first jars in our hands.

The journey is far from over; in fact, it's just truly beginning now! We still have many ideas we want to implement, as we believe that quality, additive-free, and healthy foods are necessary. In fact! Only such foods should be needed!  It's a pleasure to see that more and more people are consciously paying attention to what goes on their table, and our goal is to contribute to this offering.
