Camembert de Normandie is made from raw cow's milk, is lightly salted, has a soft paste and a light-colored rind. Since 1982, it has been protected in France by a controlled designation of origin (AOC), and in all countries of the European Union by a protected designation of origin (PDO), which distinguishes it from imitations that do not meet the specifications. The name comes from the village of Camembert, in the Lower Normandy region, where the cheese was originally made.
