Mini Cream Puff with Cottage Cheese Cream - Recipe Video
Spectacular, fluffy, cottage cheese cake with fruits, perfect for entertaining guests! We have gathered the ingredients for you below the recipe to make it as easy as possible to prepare.
Preparation
I heat the milk, add the butter, a pinch of salt, then gradually add the flour while continuously stirring until the mixture is smooth and lump-free. It's ready when the dough starts to separate from the sides of the pot. After this, continue stirring for another 2-3 minutes, then remove from the stove and let it cool for a few minutes so the dough isn't hot when we add the eggs.
When it has cooled a bit, use an electric mixer to add the eggs one by one, thoroughly mixing after each egg, then spoon the dough into buttered/floured muffin tins.
Many people use a piping bag to portion the dough onto a baking sheet lined with parchment paper, but baking in muffin tins is a foolproof method to ensure the dough doesn't spread and retains a nice shape, so we recommend this method for those who want to be sure.
Bake the doughnuts in a preheated oven at 190 degrees Celsius, on a convection setting, for 18-20 minutes. It's important not to open the oven door during baking to prevent the dough from collapsing, and place a heatproof bowl of water at the bottom of the oven to create steam during baking.
While the dough is baking, I prepare the cream, which is nothing special, just mix the ingredients together with a fork.
Once the doughnuts are baked and cooled, cut off the tops, fill them with the cream, replace the “caps,” and sprinkle with powdered sugar or drizzle with melted chocolate according to taste.
Enjoy your snack!
