Rum is fermented from the freshly pressed juice of sugarcane or molasses (a by-product of sugarcane processing that still contains enough sugar for rum production), with the help of yeast. Its alcohol content usually ranges between 38 – 54 percent, but there have been rums made with 80 percent alcohol. The raw material is fermented at high temperatures, and if the distiller deems the fermented liquid good, it is distilled. In certain cases, it is flavored with typical spices of the country of origin, or even with fruit. The distillate is then bottled after resting, or aged in wooden barrels for many years before being bottled. It's good to know that there are many white rums that are aged and then filtered through charcoal.
We can distinguish three major styles, which are significantly related to who colonized the area where the rum is made.

The English-speaking islands and states are known for their darker, fuller-bodied, spicier, more aromatic rums, where the distinctive aroma of molasses and the long fermentation time (high ester content rums) have a greater influence on the character of the drink. This includes rums from Jamaica, Bermuda, Trinidad and Tobago, Barbados, and British Guyana. Pot stills are more widespread here, which also help to produce richer flavored rum.

Rum Hampden 8 years old (0.7l, 46%)
The 8-year-old Hampden is a worthy successor of the Jamaican ancient "stinking rums," which are distinctive, high-ester rums, a fine blend of ripe fruits, spices, and phenols. Its intense taste and very distinctive aromas give it an authentic, natural vibe.
Rum Plantation XO 20th Anniversary (0.7 l, 40%)
The Plantation XO 20th Anniversary is crafted from Barbadian rums aged between 12 and 20 years. After Barbadian aging (8-10 years), it is rested for an additional 2-10 years in France, in various barrels (newly made white oak, bourbon, and Ferrand cognac).
Rum Plantation Pineapple (0.7 l, 40%)
This rum is characterized by incredible complexity: a medley of banana, lemon peel, spices, traces of smoke, and a significant amount of pineapple. The chopped pineapple is soaked in Three Stars rum for a week. Another batch of pineapple is soaked in Original Dark rum for 3 months. The two separately pineapple-flavored drinks are combined and further married in barrels for 3 months.
Rum Plantation 3 Stars (0.7 l, 41.2%)
The Plantation 3 Stars is a blend of rums from three islands: Trinidad (rums aged for 2 and 3 years), Barbados (unaged rum), Jamaica (unaged and old rum). Its uniqueness lies in the fact that filtered rum is mixed with unaged rum and a small amount of 10-year-old pot still (copper pot) Jamaican rum.

In Spanish-speaking countries, sweeter, honeyed, caramelized light rums are more widespread. Most of the rums from Guatemala, Cuba, Panama, the Dominican Republic, Puerto Rico, Colombia, and Venezuela belong to this category. This style is characterized by rapid fermentation (12-24 hours) and the use of column stills. Perhaps the most easily consumable and approachable rums come from here. We definitely recommend this style to beginner rum drinkers and those getting acquainted with rums!
It is also worth mentioning the solera aging process, which is typical for these rums. The essence is as follows: in the bodegas (warehouses) where the aging takes place and the barrels are stacked on top of each other, every year a certain amount is bottled from the bottom barrel on the floor (suelo in Spanish, hence the name), replenishing from the barrel above it, and so on up to the top row, into which fresh distillate is added every year.
Diplomático Exclusiva (0.7 l, 40%)
A cavalcade of fruity cake, rum-raisin ice cream, coconut, dried ginger, cinnamon, and cloves, with hints of baked banana, vanilla, and gingerbread. A rich and full-bodied, very lovable rum.
Diplomatico Mantuano (0.7 l, 40%)
Diplomatico Mantuano includes rums that are aged for up to 8 years. This makes it quite mature and smooth, great for use in cocktails, but also enjoyable on its own.
Rum Pampero Aniversario (0.7 l, 40%)
Pampero is a rum brand that has existed since 1938. The Aniversario is a very tasty, balanced rum, full-bodied, fruity, and with a very smooth, velvety finish. An easily drinkable rum.
Rum Millonario Solera 15 Especial (0.7 l, 40%)
A truly flavorful and excellent rum from the northern part of Peru, the land of abundance. Thanks to carefully selected ingredients, meticulous fermentation, distillation, aging, and the combination of old and new techniques, it possesses a truly unique and special character.
