Carrot Cake - Recipe Video

Are you looking for a light spring dessert? Try the carrot cake! Many people wouldn't think that such a light, creamy delicacy can be made with carrots. But anyone who has tried it once is sure to look forward to the next opportunity to taste it ;)

 

Instructions

Cream the butter with the sugar, add the vanilla extract, then add the eggs one by one, mixing thoroughly. Then add the baking powder, baking soda, cinnamon, ginger, salt, and flour.

 

When the batter is smooth and creamy, mix in the peeled and coarsely grated carrots and the crushed almonds.

 

Bake the batter in a small, baking paper-lined cake tin in a preheated oven at 175 degrees Celsius, in two batches, then let it cool.

 

For the cream, whip the butter with the sugar and lemon juice, then fold in the mascarpone with a silicone spatula.

 

Cut the cakes in half, fill each layer with cream, and cover the outside with the remaining cream.

 

Decorate with almonds and carrot slices to taste.

Ingredients

For the dough:

  • 150 g butter
  • 180 g sugar
  • 1 tbsp vanilla extract
  • 4 eggs
  • 8 g baking powder
  • 4 g baking soda 
  • 1 tsp cinnamon
  • 1 pinch ginger
  • pinch of salt
  • 250 g flour
  • 100 ml oil
  • 300 g carrot
  • 50 g almonds

 

For the cream:

  • 200 g powdered sugar
  • 120 g butter
  • 1 tsp lemon juice
  • 500 g mascarpone
