The "rose you can eat" appeared at the end of the 19th century as a cross between the red radicchio of Treviso and the endive (escarole). Its shape is reminiscent of a head lettuce, but its characteristics are typical of chicory.
Interesting fact
It got its name from the city of Castelfranco Veneto, where it was first produced, and is closely linked to the peasant culture of central Veneto.
Here, the chicory harvested from the fields was kept under straw mattresses to protect it from frost. The need for preservation led to the discovery of a forcing technique: the plants left in the dark, under tarpaulin and straw, whitened due to the loss of chlorophyll, and took on an incredibly finer flavour than the bitter chicory.
