
Green asparagus grows above the ground, unlike white asparagus, and contains much more vitamins and minerals. Green asparagus requires much less work, and does not even need to be peeled, only the bottom part needs to be thoroughly cleaned.

Use
The stem of the plant is made up of easily digestible fibres. The shoots are rich in vitamins A, B1, B2, C and E, and folic acid. They also contain many valuable amino acids, including aspartic acid, but their calorie content is low. Since most of the shoots, 93-95 percent, are water, the remaining dry matter represents few calories, with only 20 calories in 100 grams of asparagus. It is particularly low in sugar, with a total of 2 grams of carbohydrates. It contains calcium, phosphorus, iron, sodium, a lot of potassium, and trace elements such as tin, silicon and molybdenum. Green asparagus is rich in chlorophyll, and contains more vitamin C and carotene than its light-coloured variety, which is why it is also more valuable as a food.
