When he created the drink that became known as the Bellini cocktail in 1948, Giuseppe Cipriani was once again inspired by a painter, the 15th-century Venetian artist Giovanni Bellini. Peaches were plentiful in Italy between June and September, and he was particularly fond of the white variety. So much so, that he was constantly thinking about how he could transform that wonderful aroma into a drink that he could serve at Harry's Bar.

He pureed some small white peaches and added Prosecco. Those who tried it were full of praise and encouraged him to continue his alchemy. He called it the Bellini, and from that day on, the drink became part of the culture of Harry's Bar and all the Cipriani restaurants around the world.
