Ingredients for 6 people

  • 600 g HúsSzabóság beef shank
  • 3 tablespoons olive oil
  • 1 pc hot pointed pepper
  • 1 pc tomato
  • 6-8 cloves garlic
  • 200 g onion
  • 2l beef stock
  • 1 heaped tablespoon paprika
  • 1 heaped tablespoon ground cumin
  • 1 pc parsnip
  • 1 pc carrot
  • 1 pc celery root and its greens
  • 1,5 l water
  • 600 g potatoes (peeled)

For dumplings

  • 100g flour
  • 1 level teaspoon salt
  • 1 pc egg

Preparation

  1. To make the soup, fry the halved pepper and tomato in the heated oil. When the tomato turns a nice red color from caramelization, press in the garlic, then add the finely chopped red onion. Fry until the whole thing turns bronze.

  2. Pour in a ladle of stock, then when it boils again, sprinkle with paprika and cumin. Add some hot pepper to taste.

  3. On high heat, with the addition of the stock, simmer the base for at least half an hour. This way, we can prepare the meat in a tasty, rich base, which will perfectly absorb this concentrated flavor.

  4. Cut the shank into 5-6 cm cubes - note that its size will be halved during cooking - and throw the meat into the base. Cook for about 3-3.5 hours on medium heat, stirring regularly.

  5. When the meat is tender, salt and pepper it, then add the diced vegetables and celery greens. At this stage of cooking, there is very little liquid left on the meat, it is rather the consistency of a stew, so it should be topped up with about 1.5 liters of hot water, taking into account that the dish is prepared for 4-6 people, calculating about 300 ml of liquid per person. When it boils, add the potatoes.

  6. For the dumplings, knead together the 100 grams of flour, salt, and egg, cover for 10 minutes, then make the dumplings, which we collect on a floured surface. When the potatoes are almost tender, add the dumplings to the soup, and after boiling for two or three minutes, the whole thing is ready!
