80 g Gyermelyi 8-egg gyufametélt, 300 g smoked pork knuckle, 200 g pinto beans, 1 small onion, 2 cloves garlic, 1 parsnip, 1 carrot, 50 g celery, 0.5 dl oil, 2 dl sour cream, 2 bay leaves, 1 teaspoon caraway seeds, 10 g paprika, salt, hot paprika.

Preparation

  1. Soak the beans overnight.
  2. Wash the pork knuckle and put it on to boil with the bay leaves. When the pork knuckle is half cooked (but it doesn't matter if it's softer), add the washed beans.
  3. Fry the finely chopped onion in a little oil until glassy, then add the caraway seeds and crushed garlic.
  4. Stir and add to the beans. When the beans are half cooked, add the cleaned, diced vegetables.
  5. When the pork knuckle is cooked, remove it, wait a little for it to cool, and cut it into smaller cubes, then set aside.
  6. Top up the water in the beans if necessary, and add salt. You can add hot paprika and sprinkle with paprika.
  7. When the beans are cooked, add the pasta and cook until done. Put the diced pork knuckle back into the finished soup.
  8. You can add sour cream on top when serving. The pasta can also be cooked separately in salted water and added when serving.

In 1970, the government decided to build a pasta factory and was looking for a location. Gyermely's reputable cooperative undertook the task and was given the opportunity. This is how Gyermelyi Zrt. was founded.
