The small, dark berries of the juniper tree give gin its characteristic, strong aroma. Although juniper is the most dominant element in both the taste and aroma of gin, it is not the only ingredient. In fact, all dry gins are made using a similar process. Pure alcohol is obtained using cereals (75% corn, 15% malt, 10% other cereals) and then distilled with juniper berry oil. The juniper berries are picked just before they are fully ripe and are then aged and dried for 2 years. Almonds, lemon and orange peel are used for flavouring, but these are not really characteristic of traditional gin production. These secondary flavourings reveal the art of gin making and give some gins their special bouquet.

English gins may not differ much from each other, but there is a gulf between English and American gins. The first, most striking difference is in their alcohol content, with English gin at 45-47% compared to American gin at 38-40%. English gin is much drier and more aromatic than its overseas cousin. No matter what method is used to flavour gin in the world, it is always considered a dry drink.
